The aim of this text is to offer healthy recipes within a useful teaching framework. It concentrates on the positive aspects of current dietary guidelines and encourages an interest in the foods used. Each chapter contains information and an investigation section followed by recipes from several different countries, some of which are linked to the investigations. The introduction looks at what healthy eating actually is, and covers recommended daily amounts of nutrients and dietary guidelines. Each recipe can be completed in one hour and is accompanied by a chart of nutritional information. At the back of the book some suggested menus are also given.
